How to Prepare Waakye
Ingredients:
- 2 Cups of Rice.
- 1 Cup of Beans/Black eyed peas.
- Water for soaking and cooking.
- Sorghum leaves, also known as Waakye leaves (Optional).
- Salt to add taste.
Instructions:
- Carefully remove chaff from beans or black-eyed peas if there are any.
- Soak the beans or black-eyed peas in cold water and remove debris that comes to the surface, if there are any.
- Drain the beans.
- Put a pot on fire and add water.
- Wait for water to boil and transfer your drained beans into the pot.
- Add enough water to cover the beans in the pot and cover.
- Reduce the heat to low and simmer the beans for about 30-40 minutes or until the beans cook well.
- Add salt and taste during the last minute of the last few minutes of cooking.
- Prepare your rice by rinsing it under cold water.
- Add the rice to the cooked beans and stir.
- After a few minutes, add your waakye leaves (Optional).
- Cover pot. However, make sure both combinations (rice and beans) cook well.
- Cover the surface of your waakye with a napkin (Optional).
- Remove leaves (If only you added the waakye leaves to give your waakye that reddish color).
- Serve the waakye hot with your choice of accompaniments, such as fried plantains, stewed meat or fish, vegetables, and sauce.
